Banana Bread

Over a cold snowy December evening , this healthy version of banana bread, became our hot new favorite. With plenty of over ripe bananas in our fruit basket, but out of white flour,we searched online for a banana bread recipe without it and fortunately we found this one .It substitutes white flour with whole wheat flour and sugar with oooooh yummy! honey. Though denser than the regular version, this bread definitely makes you feel good and you can have a second helping too without feeling too guilty !!!!

You don't need to pull out your heavy metals for this, in fact you don't even need a hand mixer, just add all the ingredients, mix well and bake.

As much as we love to cook the traditional way, we also love to experiment and try new ones from books and other media. Henceforth we shall be posting some such recipes that we have tried and tested in our kitchen that are not original to us, instead adapted from various sources. We shall try to name the source ...if we have not forgotten where we got it from in the first place!!!

1/3 cup vegetable oil
1/2 cup honey
1 tsp vanilla extract
2 eggs
1 cup mashed bananas
1 3/4 cup whole wheat flour
1/4 tsp salt
1/4 cup hot water
1 tsp baking soda
1/2 cup chopped walnuts

1...preheat oven to 325 f (165 c)

2...In a large bowl whisk honey and oil together, then add eggs and whisk.

3... stir in bananas, vanilla, flour, salt, add baking soda mixed with hot water..stir.and add to batter...blend in the nuts.

4....spread in a 9 by 5 loaf pan...bake for 1 hour or until a toothpick inserted in it comes out clean.

5...let it cool before you slice it.

Don't leave it too long in the oven, it will get dry, once done remove and cool on a wire rack.

You could substitute honey with part sugar and part honey

Enjoy this moist bread with a hot cup of cappucino or espresso and we can assure you it will leave you with a mouthful of goodness.
