Mexican Buddha Bowl




This post is has been sitting, waiting to be published for over a month now...I'm glad it is not archived into oblivion. If you love Mexican food, hold on to your chair and stop drooling, this is food orgasm right here and right now. It is a bit of effort, but not as much as it looks, and worth every minute of the effort. My assurance, else, lunch on me...

 I was going to have my bf over for lunch and we decided to make something special, we both love to cook. It was understood that I was going to take pictures too, while she stood there and cried every 2 minutes, " are you done." Her version, I starved her, till she threatened to leave. Might be some truth to that, I was feasting visually, never realized not everyone likes to eat that way. After the photo session we both had a fabulous lunch. I'm blessed to have friends like her, caring, loving, and she's always reading my mind and moods.She is  my lifeline. So many things to be grateful for, specially the people in your life. Money can buy a lot , it can never buy good people, who add positivism and propel you forward.

This one to friends who make the world a better place and who love you unconditionally....


You will need

  1.  Guacamole
  2.  Mexican salad
  3. Mexican fried rice
  4. Mexican stirfry veggies 
  5. Mexican beans
  6. Salsa
  7. Quesadillas
  8. Assemble soft tacos 
  9. Chips (store bought) 
  10. Mexican Cheese blend
  11. Sour cream 
  12. Shredded lettuce










Guacamole

1 avocado
1 small finely choppedonion
1 small roma tomato
2-3 tsp finely chopped cilantro
1-2 tsp lime juice
1/2 jalapeno finely chopped
salt to taste

In a molcajete crush the avocado to a fine paste and mix all the above. Keep aside.


 
Mexican salad

1/4 white cabbage head finely shredded
1/4 red cabbage head finely shredded
1 small red onion finely diced
1 small tomato finely chopped
2 tablespoons pickled jalapeño juice or vinegar
2 cloves garlic minced
2 tbsp hung curd
1/2 tsp cumin powder
lots of cilantro 
salt to taste


Toss the above and keep aside

Mexican fried rice

2 cups cooked rice
2 tbsp oil
1tsp cumin
4 tablespoons pickled jalapeño chopped
juice of lime
bunch of cilantro finely chopped 
salt to taste

Heat oil, add cumin let it roast, add rice and other ingredients, toss together and keep aside. 



Mexican stir fry veggies

1 cup bell peppers different colors
1/2 zucchini chopped
1/2 cup corn roasted
1 tsp red pepper flakes
1 tsp cumin powder
2 tbsp oil
salt to taste

Heat oil and stir fry the veggies - the corn should be pre roasted on the gas stove, to give it a smoky flavor. Add spices, toss and keep aside

Mexican beans

1/2 cup cooked dark kidney bean
1/2 cup cooked red kidney bean
1 red onion finely chopped
1 tbsp taco seasoning
3 tbsp oil
1 tsp cumin powder
2 cloves garlic (paste)
salt to taste
cilantro chopped for garnish

Heat oil, add onion and garlic and saute till brown. Add the cooked beans and toss. Add salt and seasoning and keep aside.






Salsa


1 medium onion finely chopped
1 medium tomato deseeded and finely chopped
1 small bunch cilantro finely chopped
1 jalapeno finely chopped
salt to taste
juice of a lime

Mix them together and keep aside

Quesadillas

Mash  Mexican beans. On a flat griddle add a bit oil, place a tortilla add bean, salsa, a bit of veggies and cheese. Very think layer. Now add another tortilla on top and press it with your spatula and let it roast well on both side. Remove and cut in triangles.

Assemble soft tacos 

Take soft or crisp min tacos, add rice, bean, veggies, shredded lettuce, guacamole, salsa and a dolop of sour cream

Now arrange all the above in a bowl with chips. Enjoy :)
