Stuffed Zucchini Boats

Guilty pleasure in the name of snack? Not with this one!!
 Always on the lookout for a healthy snack..which FYI is our favorite meal!  We tried and TASTED this one over the last week and it was an instant hit with everyone , adults and kids alike. This quick, easy and healthy snack can be whipped up in no time. Looks lovely and tastes delicious…with all the veggie goodness….this is a winner!!

Ingredients: serves 2
Medium zucchini: 2, halved lengthwise

Olive Oil: 1 tbsp

Red bell pepper: ½ finely chopped

Spring onions: 1 diced

Tomatoes: 1 small seeded and finely chopped

Dried basil leaves: ½ tsp crushed

Bread Crumbs: 1 tbsp

Cheese- Cheddar or Parmesan: 2 tbsp grated

Ketchup: 1 tbsp

Chili garlic sauce: ½ tsp (optional)

Procedure:

Preheat oven to 375°. Scoop out pulp from the zucchini halves; set aside. Arrange zucchini halves on baking sheet. Coarsely chop the remaining pulp of the zucchini, add red bell peppers, spring onions and tomatoes, make sure you have drained any water from this mixture. Add the ketchup and for extra punch add chili-garlic sauce and mix well- keep aside.

Brush olive oil on the inside of the scooped zucchini halves and evenly spoon vegetable mixture into it. Top with cheese and bread crumbs. Bake 25-30 minutes or until zucchinis are tender. Garnish with freshly ground pepper, parmesan, salt and basil flakes. Cut it into bite sizes. Let it cool before serving. This quick snack is great for your picky eater.
