Tomato Soup

With the cold weather refusing to leave our side, we definitely needed something to soothe us after a cold wintery day out. Running errands all day , we decided to make this family favorite last night. With a side of sourdough  garlic bread and crackers , it pleased our palettes and satisfied our stomachs.
No wonder it's a classic!

Ingredients: serves 2

Butter: 1tbsp
Tomatoes: 2-3 medium
Onion: 1 small
Celery: 1 stick chopped
Basil: 2tbsp chopped
Garlic: crushed 1 clove (optional)
All purpose flour: 1 tbsp
Salt: to taste
Sugar: 1/4th tsp


In a saucepan over medium heat, combine the tomatoes, basil and garlic and boil for 10 min. Whizz in a blender. Blend it smooth and keep aside.

Use the same saucepan and melt the butter over medium heat. Stir in the flour to make a roux/paste, add the onions and then celery, cooking until the roux/paste is  medium brown. Gradually whisk in the tomato mixture, so that no lumps form. Season with sugar and salt. Garnish with freshly crushed pepper and basil. Enjoy with garlic bread or crackers!!! Print Friendly and PDF
