Tindora

There is nothing like quick, simple and home made....who says that a good tasty dish requires you to be in the  kitchen for hours ....well not really !! There are some great recipes that are quick and can result in wholesome delicious meals....unless you want to ruin it by overworking  it...well I do that sometimes ...well in my sketches ( I like to doodle with my sketchpad once in a while ) and in my cooking. Tindora - one such vegetable...I would always work too hard to make it perfect, resulting in overcooking it or I would add more spice than it needs..!! Better late than never...and now when I am in crunch for time and am craving for some good homemade food....tindora it is !!  With some plain daal ...roti/rice, it is just perfect :)


Ingredients:

1 lb tindora
1 tbsp oil
1tsp mustard seed
1tsp cumin
1 tsp cumin powder ( cumin roasted, cooled and powdered)
1 tsp coriander powder (coriander seeds roasted, cooled and powdered)
1 tsp amchur
1/2 tsp garam masala
1/2 tsp red chili powder
1 tsp sesame powder ( sesame seeds roasted, cooled and powdered0
1 tsp roasted crushed peanuts ( not powder but chunky pieces)
1/4th tsp turmeric powder
Salt to taste
1/2 tsp brown sugar



Wash the tindora, cut the outer edges and cut lengthwise. Keep aside. In a saucepan add oil , mustard, after it splatters add cumin, haldi followed by tindora. Now add salt and brown sugar and let it cook...make sure you do not add much water just a tsp or so...unless you like it mushy. In a min or two add the powders, except peanuts and sesame. let it cook.. 3-5 min, the tindora will be still crunchy not raw add the sesame powder and peanuts and mix it well. Turn off the heat ...and keep covered. Serve with some daal and rice/roti. Nothing fancy but definitely wholesome.

  8. I have to say this isn't my favorite veggie..MIL taught me how to make this with peanuts too..now i find it tolerable..

    I have a draft of that curry..dunno when I will post. :)
