Orange Pound Cake

Last weekend my teen baked an orange cake for us. I just love citrus, I have to have either an orange or grapefruit every single day and I am serious when I say everyday, I can finish a whole crate of oranges in a week and still want more. Well, you get the point. When teen asked me, if she could use 4 oranges, I was not sure If I would love the cake as much as I love the fruits that goes in it. But frankly did not want to disappoint her so agreed and played along. Am I glad I did, because this cake is the cake of the year, I just love it, it is SUPER MOIST.  Don’t go by the photographs, as I could hardly do justice to it. It was hard for me to keep my hands on the camera, all I wanted to do was eat this thing. It is a great recipe for the holidays. I am going to be baking this for Thanksgiving. It’s a no fuss recipe and you can make it ahead of time, stays very moist.

For the cake (Makes one 9″ loaf cake)

Butter – 1/2 cup, softened
Sugar – 1 cup
Eggs – 2, large
Grated orange zest – from 3-4 oranges (or make sure to get a at least a big tablespoon of it)
All purpose flour – 1 1/2 cups
Baking powder – 1/4 tsp
Baking soda – 1/4 tsp
Salt – 1/2 tsp
Orange juice – 1/4 cup
Milk ( can use butter milk) 1/4 cup
Vanilla extract – 1/2 tsp

For the orange syrup
Orange juice – 1/4 cup
Sugar – 1/4 cup

Candied orange peel 
1 cup water
1 cup sugar
peel of 2 large oranges

We took large sections of the peel and removed the white inner part completely and chopped it very fine and long. 

Instead of a glaze on the cake teen made candied orange peel. I think it worked so well, every bit of the orange was used and guess who was smiling:)

Pre-heat the oven to 350 F Grease and flour a 9″x5″ loaf pan or line with parchment.
Whip butter and sugar together till nice and fluffy. Add eggs and orange zest and whip some more.
Sift the dry ingredients together in a bowl. Combine the orange juice, milk/buttermilk and vanilla extract in another.

Add the flour mixture and orange juice mixture to the batter alternately, beginning and ending with the flour mixture.

Spoon in to the prepared pan,  and bake for 40-45 minutes or till it passes the toothpick test. Check the cake at 30-35 minutes. If the top seems to be browning too rapidly, tent with foil and bake till done. We baked it in 2 small loafs and it took us about 25-30 min. 

 orange syrup: While the cake is baking, prepare the syrup by heating the orange juice and sugar in a saucepan for a few minutes till slightly thick. Let the cake cool to room temperature, remove from pan, poke holes in it with help of a fork and pour the syrup generously on it. 

Candied orange peel : boil the peel in plain water and drain the water. In another saucepan add water and sugar and bring to boil, now add the peel and simmer till the peel is cooked, it turns translucent. let it cool, drain excess syrup and use the candied peels to decorate the cake. 

Now warm the cake and sit down and enjoy each bite of the amazing, super delicious cake.

  14. This is waaaaaaaaaaay beyond a normal pound cake. What special recipe. Oranges are associated with Xmas too.
