It is crisp on the outside and soft inside, beautiful texture, whole sum, flavorful and super easy to make. I forgot to add - it is like a super food, really healthy. Evolved I have and somewhere I think it is all because I have found a creative outlet that I identify with. I have discovered myself. Small things don’t bother me, I don’t feel the need to prove myself to others - I just want to enjoy the journey. Wow ! I sound like a perfect angle….well, far from it. It was in September that I baked a cake for hub’s birthday - it was a new recipe and it fell apart and I did throw a mini tantrum that I was the worst cook ever. ( looks sheepishly )
Thankfully this is NOT a failed recipe and I just love it - total added bonus that it is super healthy.
1/4 cup of mixed lentil flour
1/4 cup durum wheat flour
1/4 cup semolina rava
1/4 cup cooked quinoa
1 small red onion finely chopped
3-4 tbsp corn
2-3 tbsp reb bean ( cooked)
1-2 green chili finely chopped
handful of cilantro finely chopped
1 tsp cumin seed
salt to taste
2 tbsp oil
For mixed lentil flour
1/4 cup urad daal/lentil - black gram without skin and split
1/4 cup chana daal/lentil - bengal gram
1/4 cup mung daal/lentil - green gram without the skin
Dry grind all the daals and sieve. If you are not able to use mix of these lentils, use any lentil flour that is available. I used the vitamix to grind the lentils.
Mix all the above ingredients and add water so it form a thick dough. Thicker than pouring consistency. Now heat a pan add oil and pour 1/3 cup of the dough and flatten into circle with ladle - keep covered till it is roasted on one side, turn sides and roast on the other side too. Cook on low- medium heat. Make sure it is cooked all the way - by inserting a toothpick.
You can substitute durum wheat with all purpose. Instead of rave you can use half of 1/4 cup of bread crumbs.
Serve with Salsa.
1 white onion
1 firm red tomato
1/4 red bell pepper
cilanro finely chopped
1 green chili finely chopped
juice of half a lemon
salt to taste
1 tsp sriracha sauce
Mix all the above. If you are going to make it ahead of time, add salt when you serve, as it will leave water.
