Easy lemon curd recipe in less than thirty minutes. Creamy, citrusy versatile and super easy to make. Make a lemon tart or lemon bars or in a parfait..or just on a toast. Just five ingredients and about twenty minutes, you can make it in a microwave or stove top. Refrigerators for up to two weeks.
Last two weeks we had beautiful gorgeous days, sunny and cool not cold...I think I said it too soon, today is rainy, gloomy and cold. Spring/summer is right around the corner and I cannot wait to start planting my herbs, am planning to widen my herb patch - the mint seem to have overtaken the whole patch. I can see sprouts of mint all over. Have to wait for May before I start gardening...seems so far off.
I have resumed my morning walks, early mornings are still very cold so it's usually mid mornings. I just love to stand by the pond and watch the perfect reflections ....birds chirping in background and the stillness of the morning air. I go to the same spot and stand there gazing into the small pond...day after day. Gives me so much peace and tranquility... not an intruder anymore, I fit in there.
It was Monday this week, when I was off with my camera ...and guess what I saw...someone in my spot with this huge 400mm lens ...I was visibly upset to share my spot and tranquility with a fellow of my tribe. I stood two feet from him..he shushed me as he was trying to take a picture of the bird. As I focused my lens at the reflections and he probably on the bird... Two completely different vision and stories ...I really felt no one can take my spot...no one can really see or feel the way I do. As I think of my spot ..I have an urge to walk there and gaze at the water, only if it was not raining.
It has been a super busy week and I was planning to take a few weeks off blogging. But here I am back on the blog...I was making a batch of lemon curd, teen loves all kinds of toppings on her toast, lemon curd/butter, cookie butter (need to blog that), almond butter, Nutella.... Well, we love our nut butters (other than peanut) and fruit curds around here and citrus is specially our favorite.

Easy lemon curd recipe in under 30 minutes
Ingredients
- 3/4 cup fresh lemon juice
- 2 tbsp fresh lemon zest
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup unsalted butter
Instructions
- In a sauce pan combine all the ingredients.
- Cook over medium- low heat, stirring occasionally.
- Cook till it thickens to hold whisk marks
- It thickens as it cools too.
- Strain if the zest are big - mine were very fine, so I did not strain.
- Store in airtight container after it has cooled - in the refrigerator
Stays good for two weeks.
Note : If you are not confident of making it straight on the stove top - as you think the eggs might curdle...use the double boiler method. it takes about 5-6 minutes longer but be rest assured your eggs will not be curdled.
Even in the method above - if you have a constant low- medium flame, it won't curdle.
You can also make this in a microwave, that is how easy it is...since I have not tried it in a microwave - I'll update this recipe when I do.

ReplyDeleteTalk about someone taking your favorite spot, I have been there and I have shown faces of disappointment to share, but the reality is there is no spot called as "my spot" atleast in India and definitely not in my neighborhood lane :P, the lesson I learnt the hard way.
