Kadi


     A spicy yogurt curry /soup, this flavorful Kadi , has many variation across India, with or without pakodas( a deep fried fritter) , more or less sweet, with or without cinnamon and cloves....well you get the idea!
We use our mother's very basic recipe  for our kadi ....try it !

Ingredients: serves 4

Gram flour: 4 tbsp
Yogurt : 1 cup
Sugar: 2tbsp
Cilantro : finely chopped and for garnish
Salt: to taste
Red chili powder: ½ tsp
Turmeric: pinch

For Tempering

Ghee: 1 tbsp
Cumin seed: 1 tsp
Mustard Seed: 1 tsp
Methi/Fenugreek Seed: 1 tbsp
Asafoetida: Pinch
Green Chilli: 1 split
Curry leaves: 2-3


Mix gram flour, yogurt, sugar, salt and red chili in a bowl and whip to form a creamy paste, mix with about 2-3 cups of water and bring to a boil.

For tempering: heat a pan, add ghee and then mustard seeds, once it splutters, add cumin, wait for it to brown, now add methi seed, after it turns a little darker in color, add asoefetida, split green chili and curry leaves. Sizzle it over the hot boiling kadi and garnish with cilantro …serve hot!!  You can serve it with rice or rotis and goes very well with any vegetable but the classic combo is khichdi n kadhi.
