The best way to our men's heart is an egg based dish . Most bachelors are so used to relying on eggs for a quick meal, that even after they are married and lucky enough to have a spouse who loves to cook, they still think of eggs, whenever asked the famous question ,..".what shall I make for breakfast or as in our case lunch or dinner"???
Omelets, fried eggs, egg curry, just eggs in any and every conceivable form is just fine. So last night we had some simple, but wholesome egg curry with some whole wheat bread to compliment it. Perfect finale to the long weekend!!
Ingredients: Serves 2-4
Hard boiled eggs: 4-6
Oil: 1-2 tbsp
Onion: 1 large
Tomatoes: 2-3
Green chilies: 1-2 ( optional)
Ginger root: an inch grated
Cumin: 1 tsp
Bay leaf:1
Cumin powder: 1tsp
Garam masala: 1tsp
Turmeric powder: ½ tsp
Red chilli powder: ½ tsp
Salt to taste
Chopped fresh cilantro leaves to garnish.
Hard boil 4-6 eggs and keep aside. Grind onions, tomatoes and ginger to fine paste. Heat 1 tbsp of the oil in a heavy bottomed pan add the cumin and bay leaf when the cumin stops spluttering add the slit green chillies then add onion/tomato paste, roast to a light brown color, till the paste thicken and leaves oil, now add the garam masala, jeera/cumin powder,salt, red chili powder and turmeric. Stir to mix well and let it cook on medium flame for 3-4 min. Peal the hardboiled egg and cut them, add it to the gravy and simmer on low flame, till the gravy thickens and coats all the eggs. Garnish with cilantro...and enjoy with hot jeera rice or just bread as we did.

ouu curry! I'm not a very big fan of curry because i cant take spicy food. but i love the sweet curry :) i never tried it with eggs! def going to try it out! thanks for your advicee :)

Tat is comfort food for me....egg curry nytime...i too cook de same way...but add coconut milk at the end...tastes awesome.
