Eggplant

One of the most beautiful part of nature is sunrise and sunset, specially after a cloudy rainy night/day. We don't think any lens can capture this magnificent stroke of art with all its vibrant colors.... but we all still try, don't we :) this one our favorite for this season!!

Now coming back to food...we will be presenting 'yengai'...or the spicy eggplant from our kitchen to yours!! enjoy!!


Ingredients:

Eggplant: 1 medium to large washed and diced into cubes
Juice of tamarind: 1-2 tsp
Jaggery: small lemon size
Masala Bhat Powder : 2 tsp
Turmeric: 1/4 tsp
Salt to taste
Oil: 1 tbsp
Mustard: 1 tsp
Hing/asafetida: 1/4 tsp
Curry leaves: 2-4


Heat oil in a saucepan, add mustard, as soon as it begins to splatter add asafetida, turmeric and curry leaves followed by diced eggplant salt anf jaggery. Let it cook for 3-4 min covered on high flame. Add tamarind  paste and masala bhat powder. . Poke the eggplant with a toothpick to test if it is cooked. Serve with hot rotis or rice!!

  9. Lovely capture of nature as it's best. Your are right after a rainy night ,when sky is crystal clear next morning the view is awesome....NS That's a nice spicy eggplant dish.

  11. my mouth is sure watering after looking at that picture!! When i was young - I use to HATE it and wouldn't even dare to try it. But now - it's a different story. I'm in love with them. I guess when we age - our taste will be different eh? Thanks for sharing :) awesome post.
