I wanted to bake a dessert, one of my mother's recipe, and an absolute favorite. Two things happened - one I could not make up my mind on which one so I called my mother and then she asked me to make something new - something that I thought she would love! So, here it is.
Thank you to my mother for teaching me to live life one day at a time, to enjoy the finer things, to be patient, as everything happens for a GOOD reason, and from whom I get my artistic eye (if I may say so myself) and the enthusiasm to cook and entertain. Happy Mother's Day!!
This recipe was bookmarked by me a couple of weeks ago. I just had to roll up my sleeves and bake some kuchen, mother's day was the perfect excuse :) Thanks to Now Serving, for introducing me to this recipe. Now serving is a wonderful blog with some awesome collection of recipes.
½ cup butter
1 cup sugar
2 large eggs
1 cup all purpose flour
1tsp baking powder
3-4 large red plums sliced
¼ cup red cherries (pitted) in half
¼ tsp cinnamon powder
1 tsp Fresh lemon juice to squeeze over the cake before
baking
Preheat oven to 350. Butter a round cake tin (about 8 inch
in diameter). Cream butter and sugar then add one egg at a time and beat
lightly. Fold in the flour and baking powder, until mixture is creamy. (Don’t over
mix). It is a thick batter. Lay one layer of sliced plum and cherries on the
buttered tin and pour the cake batter. It will spread thin as it is a thick
batter. Add another layer of plums and cherries and pour the remaining batter.
Pat the cake pan so all the batter gets into the crevasses.Pour the lemon juice over it. Bake for about
40-45 min. do the tooth pick trick!! Serve warm
This is a perfect kuchen for a picnic. Some sandwiches, lemonade and some disposable dinnerware, your backyard or a nice trail!!Perfect recipe for happiness!! J Happy Mother's day to everyone out there !!
