I really have nothing on my mind today, I run a blank, which is unbelievable, as I always have something to share. All I can think of is spring, I am so done with this winter, am yearning for some fresh spring air. We have had a horrible winter in Midwest, US this year. I feel like an old hag, lol! The only way am going to get motivated is some warmth. Every one is crabby (thanks to cabin fever), I spoke to my friend on the phone yesterday, she ranted for an hour, my teen was ranting at night, my neighbor says she is going to move ( in a very threatening and accusing tone), the reason is not me, lol, I do hope it is not me. She can’t handle the cold anymore. Hubs of course is hating this winter, he usually does not complain, but this winter… ummm! he is making up for all the years of not complaining. You get the situation! Hopefully, I will be back to my happy go lucky self again. On a serious note, I don’t think any of us have a right to complain, we are all so fortunate to have a warm shelter and food on the table, you think of the homeless and all you can do is count your blessings.
I really was in the mood for some warm , comforting soup and hopefully this is the last soup post for the season. But here it is an absolute family favorite, sweet carrots with the sharpness of ginger a marriage made in food heaven.
1 1/2 cup carrots chopped
1 medium red onion
11/2 inch fresh ginger ( or less)
2 tbsp oilive oil
1/3 greek yogurt or home made thick yogurt ( make sure it is not too sour). If sour, use half n half.
1 cup vegetable broth
salt to taste
Sauté the onions and carrots in olive oil, thrown in everything into the blender, till it is smooth. Bring soup to a boil. Serve hot, garnish with some creamer or sour cream.
Believe it or not, that’s all there is to it.
