Hummus n chickpea on a toast

Am thinking spring, fresh salads, smoothies, ice cream, watermelon, flip-flops, shorts…ah the joys of spring n summer. I really wanted to eat something light and fresh today. For some reason I just ran out of ideas, I was thinking of warm n comforting recipes like soup, stew, warm sandwiches. But one look at the hummus in the fridge, I knew what I was doing.  Snack is a favorite meal in our household, we do snack for dinner all the time. A bowl of warm soup and some starters like this and it’s dinner. ‘Finally Teen’ can survive on snack like any teenager.  She loves bite size food and digs hummus.  Am not complaining, there is chickpea, home made hummus, and some greens, I really do not mind her making dinner out of this. She loves to add pineapple on hers.  I need to do an open toast marathon on the blog. What’s your go to snack in your house hold?


Thanks for all the visits on the last post,  I got 4000 plus views on that one, it jumped up to the second favorite on the blog in three days. That felt really good as it did take me effort to photograph those charred peppers. It’s an added bonus that the soup was delicious. My neighbor was pretty upset that we did not share it with them, so am going to be making this real soon for them.



This recipe is one of the easiest I have done on the blog.

1/2 cup Hummus ( preferably home made) recipe here 
bread sliced and toasted on a grill ( love the marks)
1/4 cup olive oil
chopped onions
chopped green bell peppers
chopped olives
chopped pineapples ( optional)
chopped tomatoes
baby spinach leaves
cilantro
1/4 cup cooked chickpeas ( soak over night and coo, you know the drill)
salt to taste

Take 2 tbsp oil and sauté all the veggies other than tomatoes and olives, turn off the heat, let it cool a bit and add tomatoes, baby spinach and olives. Add salt, red chili flakes, black pepper and cilantro. ( do NOT cook the tomatoes and spinach), sprinkle salt and at the cooked chickpeas and toss.

On the toasted slice of bread spread a tsp of humus add the topping, dribble some olive oil or honey, sprinkle some red pepper and enjoy :)

You can make the hummus ahead of time, this is a great starter for parties and you can customize the toppings.
