Pancakes with blueberry sauce



Pancakes bring  a smile to our face, especially  the variety that is made in this country! Although we are not the kind to crave for a sweet based breakfast, it definitely makes its way to our plates with good friend and close companion ...Eggs .

    A lazy sunday brunch usually calls for eggs and pancakes, add some toast and orange juice,  we are set  for some no interruption  movie time!!  This past sunday was one such weekend when we decided to catch up on some movies, we watched "Up in the air" , (some hot coffee ) 'The Education',  ( a cuppa tea) and ' Did you hear about the Morgans '.

  While making these stack of pancakes , we wondered if there was a tallest stack ever and sure enough there did exist one!!! The record for the tallest stack of pancakes is 29.5 inches ... Chefs Sean McGinlay and Natalie King of Glasgow’s Hilton Grosvenor hotel created this pile containing 672 pancakes . They mixed about 100 eggs, more than 17 pints of milk, 11 pounds of flour and 6.6 pounds of butter for the challenge… who got to eat it….???..well !

Pancakes:

Egg : 1
Flour: 1cup
Milk: 3/4th cup
Butter: 1tbsp or a little more
Sugar: 1tbsp
Baking Powder: 2 1/2tsp
Salt: a pinch
Vanilla Essence: few drops
Water: to bring to pouring consistency.

Whisk all the ingredients together in a bowl. Heat the griddle on high. Test if the griddle is hot, by sprinkling afew drops of water on it. If the drops sizzle, you are good to go. Pour batter onto the preheated griddle, let cook for a minute or two, till bubbles start to pop on the pancake surface. Flip and cook about one more minute. Top it with maple syrup and whipped butter or blueberry sauce or strawberry compote, with a side of some fresh strawberries ... if blueberry sauce is on your mind, here is how we make it.    Cartoon From
    
For Blueberry sauce:

Blueberries: fresh or frozen: 1 cup
Apple Juice: 3/4th cup
Sugar: optional
Cinnamon powder: 1/4th tsp optional

In a sauce pan pour the apple juice and blueberries simmer for a good 20-30 min. Now take half of the contents of the mix and blend it , use caution as it is hot. Now pour back blended puree with the rest and bring it to a boil….it will be a thick syrupy consistency. Add the cinnamon powder and mix well. Serve hot or chilled. You can use it as a topping with pancakes, ice-cream, baked apples, anything you can get creative with. It has a rich fruity flavor and color.

  1. Lovely pancakes and nice info about the pancake stack! What is my favorite version? Cocoa pancakes and then of-course banana pancakes with strawberry chunks..both recipes I posted recently at my blog..
    I saw "Up in the Air" last week. I was already a fan of Anna Kendrick's character in Twilight and even more so after seeing this movie. She has aced the role of a straight-laced female in this movie. Awesome! Ciao.
