Masala Bread

I Think this is one of the most beautiful time of the year ......atleast in Midwest. the trees turning green, lush green manicured yards, cherry blossoms, daffodils and birds chirping happy songs. I love to have my tea outdoors, spring and fall are the only time of the year when the temperature is perfect for  a picnic, BBQ or just a cup of tea. Sunshine, a cool breeze and a beautiful day like today is just perfect to waste outdoor, just sitting and watching the world go by - we all need some 'me' time and this is the best treat I can give myself.

While I was blog hopping a few weeks ago, I came across this awesome recipe of masala bread at "Show me the curry"  Absolutely feel in love with the layered bread. I did not know it would taste this good....it is  bread nirvana. Thanks so much Hetal and Anuja for such an awesome recipe.

1 cup -warm water
1 1/2 tsp - rapid rise yeast
1 tsp - sugar
1 1/2 tsp - salt
1/3 cup - olive oil
3 cups - all purpose flour

Filling

7 oz - paneer crumbled
1 - small mashed potatoes
1 - small onion finely chopped
1 - small  bunch of spinach finely chopped
2 - green chilies finely chopped
1/4 tsp - turmeric
1 tsp - garam masala
1 tsp - red chili powder
salt - to taste

Mix all the ingredients for the filling and keep aside.

Measure 1 cup of water at room temperature and heat it in the microwave for 30 sec, add rapid rise yeast, salt, sugar and oil and mix well, till the yeast is dissolved.

In a separate bowl mix the all purpose flour with the yeast mixture (a little at a time) till you have an elastic soft dough, use extra all purpose flour if the dough is too wet.  Kneed for about 5-6 min.

Roll the dough into a rectangle shape about  9 by 13 inches.

Spread the paneer- potato mix on the dough and gently press it.

Start rolling the dough into a log.

Lightly oil a bread pan and place breadlog in the center, seam side down. cover with a damp cloth. Preheat oven to warm setting or 150 F. Turn it off and keep bread in the oven and allow the dough to rise for about an hour.

Preheat the oven for 450 degree F ( 232 C) and then reduce it to 425 degree F (218 C) . Bake the bread for about 30-35 min till the crust is nice and brown.

Place on the cooling rack for about 30 min.

Cherry blossoms make beautiful cut flowers. Lovely bunches of tiny flowers, hugging together, bringing the outdoors in. What would life be without flowers.
